The Unintentional Vegan was created as a blog site and cookbook series to help vegetarians enjoy vegan versions of popular comfort foods. If you miss being able to enjoy a chicken fried steak with country gravy, a savory beef stew, a grilled steak with Au Jus,  spaghetti with Bologense sauce, or a delectable creamy ice cream sundae, then this site is for you. Why spend a small fortune to purchase processed vegan versions of your favorite comfort foods when you can make all of these products for a fraction of the cost from within the comfort of your own kitchen?     My girlfriend recently became vegan, she loved beef jerky. In trying to find a way to make her some, how would you make your meatless ground meat?

      I have included a recipe for vegan jerky in my book, The Unintentional Vegan: Beef.

      If you choose not to purchase this book, I will suggest the following. Make a FLAVORFUL TVP (textured vegetable protein) mixture. Season it to taste. Add liquid smoke or other flavorful ingredients. Spread a thin mixture onto a sil-pad (silicone baking mat) lined baking sheet. Bake it low and slow at 250 degrees for 2-4 hours (the amount of time depends upon the liquid content). When the outer service is dry and leathery, take the pan out of the oven. Place a sil-pad over the jerky. Place an empty sheet pan face down over the sil-pad. Flip the pans over. Remove the original pan and peel off the sil-pad. Bake the jerky for another 2-4 hours or until it is thoroughly dry.

      For food safety purposes I recommend cutting the jerky into strips. Let the jerky cool to room temperature. Store the jerky in a zip-lock bag in the refrigerator.

      Vegan jerky may be crumbled and added to a chili or spaghetti sauce prior to serving. I also mix crumbled jerky with a fresh batch of TVP to make meatballs, burgers, and even meatloaf.
